Now this is a MEXICAN CASSEROLE! It is thee best Mexican dish I have ever had! I drained a can of rotel right before the last layer of cheese, This truley cannot be beat! Thanks a bunch~~~~~

Delicious and easy recipe. DH said it was one of the best Mexican dishes he has ever had. I used refried beans with green chilis mixed in them and did add some salsa with the picante sauce, other than that did not change a thing! Thank you for posting!

This was indeed a simple and easy to make recipe and I appreciated having something so quick and hearty for dinner on a very cold night! I did feel it was missing something for our tastes, but we are very new to to Tex-Mex food so we're no experts - witness my horror on opening a can of refried beans for the first time and frantically searching for the 'beans' amoung the brown sludgy stuff!! DH was able to explain that this was in fact ok and edible! LOL! Lots of hot salsa and sour cream on the side went very nicely; thanks for posting and I'm looking forward to eating the leftovers!

This was one of my picks for Pick a Chef 2006. Ground turkey was buy one get one free, so I used two pounds of it. I only had half a jar of picante sauce in the fridge, so I made up the rest with a half-jar of Le Gourmet Chef Tomato Two-Step salsa (gotta love those clean-the-fridge recipes). Oh, and I didn't have any packaged taco seasoning on hand, so I made my own (a Zaar recipe, of course!). This made a nice simple inexpensive dinner, and it was something that everyone in the family could eat (having a Mexican DH means that most of the Mexican food I make is way too spicy for 3/4 of the family). That being said, I'm not sure that DH will like this, because he's not a big fan of "Americanized" Mexican food (read: anything remotely Taco Bell-ish). That's okay though; it's making up for the days that I made dinners that he loved and Mom, Dad and Gram couldn't even eat. I'll definitely be adding this to my "payday's so far away and I'm gonna be late for work" recipe file lol Thanks for posting! :)
