These are quick, easy and delicious. They're also healthy and high in fibre! I eat them a lot when I'm trying to lose weight.
- 1 cup baker's bran flakes
- 3⁄4 cup milk
- 1 tablespoon golden syrup
- 1 egg
- 3⁄4 cup flour
- 1 cup sultana
- 1⁄4 teaspoon salt
- 1⁄2 cup sugar
- 1 teaspoon baking soda
- Soak bran, milk (I use soymilk) and golden syrup together for 5 minutes.
- Mix in all other ingredients.
- Preheat oven, and bake for 20 minutes at 180 degrees Celcius.
These turned out very well. I used a combination of fresh squeezed orange juice with a lil water and soymilk powder in place of the milk. I also used dried red currents instead of sultanas. Next time I will try reducing the sugar and using a little whole wheat flour in place of some of the regular flour. At least if I use orange juice again, which naturally increased the sweetness. No pun intended. I didn't want to do that on a first attempt since it can change the consistency/texture.
I'm sorry I haven't reviewed these sooner! I've made so many batches of them because they are so healthy, low in fat and calories and still taste good! So many other recipes out there still have quite a bit of fat! I often eat one for morning or afternoon tea. I just used a regular muffin tin sprayed lightly with cooking spray and had no problems with them coming out of the pan. I've substituted 1/2 of the sugar with Splenda to lower the calories even more. The muffins are not huge, but are a good size for a snack! I also like the fact that these muffins use baking bran, rather than bran cereal! Thank you for this recipe!
These tasted great. My problem was with the directions. They were quite lacking. Don't use paper liners! They are virtually impossible to remove after the muffins are baked. That information would have been nice to have had ahead of time. I will try these again without the liners because they were quite tasty. I subbed in two egg whites instead of the whole egg and omitted the raisins. I will make these again.
