- Crumble and mash blue cheese in a bowl. Add cream cheese; beat at medium speed with an electric mixer until smooth. Add brandy, beating until blended.
- Cover and chill.
- Serve with assorted crackers or pumpernickel or rye rounds. It is also good with apple and pear slices.
