I used beef stock, a hot salsa, and added a few minutes of uncovered baking to reduce the liquid. Excellent flavor to complement that great barley chewiness. Recommended!
This is an excellent and very easy recipe. Unfortunately, I have very fussy kids so they wouldn't even try it. It was too different from the norm. But otherwise this is something I will most certainly make again.
I like to make barley as a side dish occasionally and this was a keeper!
This was so easy to make and tasted great! I made it with a spicy salsa, so I couldn't serve it to my 2 year old, but next time I will definitely go for the non-spicy version and I'm sure he'll gobble it down. Thanks for this recipe!
