A tasy and easy way to serve barley
- 1 cup barley
- 1 small onion, chopped
- 3 tablespoons butter
- 3 cups chicken broth
- 1 cup salsa
- Pre heat oven to 350 F degrees.
- Melt butter in a pan and saute onion and barley until toasted then put in a casserole dish.
- Add everything else and cook 1 hour covered.
- Uncover, and bake 20 more minutes or until liquid is gone.
I used beef stock, a hot salsa, and added a few minutes of uncovered baking to reduce the liquid. Excellent flavor to complement that great barley chewiness. Recommended!
This is an excellent and very easy recipe. Unfortunately, I have very fussy kids so they wouldn't even try it. It was too different from the norm. But otherwise this is something I will most certainly make again.
I like to make barley as a side dish occasionally and this was a keeper!
