  1. Pre heat oven to 350 F degrees.
  2. Melt butter in a pan and saute onion and barley until toasted then put in a casserole dish.
  3. Add everything else and cook 1 hour covered.
  4. Uncover, and bake 20 more minutes or until liquid is gone.


Most Helpful

I used beef stock, a hot salsa, and added a few minutes of uncovered baking to reduce the liquid. Excellent flavor to complement that great barley chewiness. Recommended!

This is an excellent and very easy recipe. Unfortunately, I have very fussy kids so they wouldn't even try it. It was too different from the norm. But otherwise this is something I will most certainly make again.
