Simple Banana Bread 2

"Here is a revised version of the Super Simple Banana Bread recipe I posted. Someone recommended increasing the baking soda, adding 1/8 teaspoon of nutmeg and changing the flour from 1.5 cups white to 1 cup Whole Wheat and 1 cup all purpose white and using brown sugar rather than white. I highly recommend doing just that!"

  • Preheat oven to 350'F.
  • Roughly mashed bananas in large mixing bowl, don't worry about a few little chunks, it doesn't need to be perfectly smooth. Mix in sugar, nutmeg, egg and vanilla. Sprinkle baking soda and salt over mixture and stir. Add whole wheat and all purpose flour and mix just until blended.
  • Pour into greased loaf pan (preferrably glass).
  • Bake for 1 hour or until you can insert a knife and have it come out clean.
