Simmered Chinese Chicken

"This is a super easy to make "all in one-pot" dinner. The flavors are wonderful. The recipe calls for a whole chicken but I have also made it with boneless breasts and thighs."

  • Rinse the chicken and remove"the goodies" from the inside, pat dry with papertowels.
  • Heat the oil in a large dutch oven or soup pan.
  • Brown the chicken on all sides.
  • Mix soy sauce, brown sugar, 1/2 c water, catsup, sherry, red pepper, garlic and green onion together.
  • Pour mixture over chicken.
  • Cover and simmer 45 minutes.
  • Remove the chicken to a serving platter.
  • Dissolve the 2 T of cornstarch in 1 T of water.
  • Add to the sauce in the pan, over low heat, to thicken.
  • Pour sauce over chicken.
  • We serve this with rice and pour the sauce over the rice as well.

  1. This is a fantastic chicken recipes. I used boneless skinless chicken thighs as that is what I had. It smelled absolutely wonderful while it was cooking. Only took about 30 minutes to cook and I didn't not need to use the cornstarch as the sauce cooked down just fine. Served with recipe #24366. Thanks for posting this.   2. Thanks Mom of Pvt. Amy for a delicious all in one pan chicken. I did not have a lot of chicken pieces so I halved the recipe. I made the mistake of adding some chunks of red potatoes along with the chicken. That explains why the sauce disappeared. I even added a half a cup of water to the pan and scraped up the bits which left me with a bit of sauce. Next time I will cook potatoes or any veggies separately. AND I will double the sauce. Also I did not have apple juice so I used pineapple juice. Let me say, it was so delish with the sauce caramelizing onto the chicken, giving it a sweet sticky bbq flavor without an outdoor grill !! The chicken cooked in about 1/2 hour. Definitely making this again with lots more sauce which was soooooo tasty! You guys have to try this. It is really finger lickin good !!

  4. I think this is most enjoyable chicken dish that I've ever eaten. I used a whole chicken, didn't change a thing and the meat was super moist and the flavor combination was sublime.
     
  5. Delicious and quick! I can't believe a 6# chicken cooked in under an hour. The whole family enjoyed this and I look forward to fixing it again. I didn't have apple juice or sherry, so I just used water. My family likes things a little on the spicy side, so I used a little over 1/2t of red pepper. The flavor was excellent, the chicken was so very moist, and the house smelled great. Thanks for sharing.

  1. Delicious! I used 2 boneless, skinless chicken breasts & they came out moist & tender. I used Splenda brown sugar blend in place of the regular brown sugar & reduced sodium soy sauce. I only used 1 tbsp cornstarch instead of two & it worked fine. The crushed red pepper added a nice bite. I think the sauce would be great served on the side as a dipping sauce since it makes so much. A keeper for sure.
