  1. In a skillet, heat oil and add green peppers.
  2. Cook 3 minutes.
  3. Add garlic.
  4. Stir in corn and salsa.
  5. Bring to a boil.
  6. Stir in tomatoes and shrimp.
  7. Cook 1 minute.
  8. Stir in butter.
  9. Spoon over tortilla chips or rice.
  10. Garnish with cilantro and lime.

*For PAC Spring 2008* - prepared as listed, except for corn (can't do that). Served over Saffron rice. Made a lovely Friday night dinner, enjoyed by DH and me, plus enough for his lunch tomorrow. We generally "spice" things up a tad, and next time (and there WILL be !) - may add some tad of taco or chilli seasoning. I particularly liked the mingled flavors, none of which overpowered the rest. Thanks, Kathy!! for a tasty addition to "Fix-Again" list.
