Shrimp Stir-Fry

"I addapted this out of a children's cookbook. Everyone loved it so much that I have to make it once a week now, lol. You can just serve it with boil in the bag rice which is what the original recipe suggests."

ingredients

  • 500 g large shrimp, peeled and deveined (i used allready cooked shrimp)
  • 44.37 ml soy sauce
  • 1 garlic clove, finely chopped
  • 29.58 ml vegetable oil
  • 1 small red bell pepper, coarsely chopped (capsicum)
  • 1 small onion, coarsely chopped
  • 16 snow peas, ends trimmed and rinsed (mangetouts)
  • 29.58 ml water
  • 0.25 ml pepper
  • 2 (400 g) straight to wok rice (unsure about size but i used 2 packets, can just have this on boiled or steamed rice)

directions

  • combine shrimp, 2tbsp of the soy sauce and the garlic - stir with a wooden spoon until evenly coated and set aside for ten minutes.
  • add vegetable oil to wok / large frypan and set over a medium-high heat.
  • when oil is hot add red pepper and onion.
  • cook stirring constantly until the pepper is slightly softened , about 3 minutes.
  • at this point i added my straight to wok rice an heated through, if you are not doing this skip to the next step.
  • add the snow peas and shrimp mixture.
  • continue stirring and turning until shrimp turn pink and are cooked through ( i used allreay cooked shrimp) and the snow peas are tender but still crisp about 3 minutes more.
  • remove from heat and add remaining tbsp of soy sauce, water and the pepper.
  • serve imediately (on a bed of rice if you have not used straight to wok rice).

  1. Pleasantly surprised! I wasn't planning on making this till the last minute and didn't have peppers or snow peas on hand...all I had was shrimp. So, Instead I added pre cooked (microwaved frozen) cauliflower, green beans and broccoli and my kids even ate it! It had a great taste. I will be making this again.....sooner rather than later!
     
  2. Wow this was really good. We all enjoyed this. My husband who normally doesn't eat stir fry had three helpings. I used two pounds of shrimp, a cup of red peppers, about a half of cup of onions and a pound of snow peas. I used olive oil instead of vegetable and then added the 3 tablespoons of lite soy sauce and 2 tablespoons of water. I didn't put it over rice as hubby doesn't care for rice. I will make this again and will try it with chicken also. Loved it!

I lived in new zealand for 8 years of my life, now england for the past 8 years. I go to boarding school on the east coast of england. I have friends from all over the world, my best friend is canadian and also lived in france, so her mum and her for that fact, are mean chefs, boy do i like going to her house. I recently found out I am intollerant to wheat so have found it difficult to give up such easy foods to find and now have to search harder. I also have 2 leaks in my heart, one on a valve going in and one on a valve going out. A top carteoligist from London told me as long as I don't get pregnant for a while (I should hope not, I'm only 15) or eat fatty foods, my heart would do allright. He said he didn't want to operate on me yet, beacause there is a operation coming in the next 10 years which is lazer, so he wants me to wait, but he said I was fit and healthy and had no need to worry, yet....... when i was younger i dreamed of being a choreographer or a marine biolagist, then i wanted to work for vouge magazine, then get married and move to barbados and raise a family where the only thing that passes anyones lips will be home grown or hand made, a bit ambitious i know, hehe. But now my dream is to be a laywer and help others that really need it, and hopefully move back to my roots and bring up a family there For lent i have given up refined sugars and it is so hard and i am only 3 days into it, i was starving at school, opened my tuk box only to find marshmallows and smarties and a box of cereal, i think cereal is about to become my best friend over the next 6 weeks. LOL EDITED 30TH AUGUST; Last night at 3:30am, my best friend lost her battle to cancer and it has made me realise how important it is to live life to the full and take every opportunity thrown at us. She was a special girl and only 15 - wherever she is now though, she is out of her suffering. I have no doubt that she went straight to heaven.
