- 500 g shrimp, cooked
- 1⁄2 cup mayonnaise
- 1⁄2-1 teaspoon dried tarragon
- 1 large gherkin, diced
- 1 tablespoon capers, drained and rinsed
- 2 teaspoons mustard, made
- 1 spring onion, diced
- to taste fresh black pepper, ground
- Place shrimp in a bowl.
- Combine all remaining ingredients and pour over the shrimps, turning to coat well.
- Cover and refrigerate for 2 hours for flavours to develop.
- Serve in cocktail glasses and garnish with fresh chopped herbs.
