This is a great recipe I just tried from Everyday Food. It was easy, quick, and a hit with everyone at lunch!
- 1⁄4 cup light mayonnaise
- 1⁄4 teaspoon tarragon, dried
- 1 -2 tablespoon lemon juice
- salt and pepper
- 2 hot dog buns
- 2 lettuce leaves
- Combine shrimp, mayonaise, and tarragon in a bowl.
- Mix in lemon juice, salt, salt and pepper to taste.
- Line each roll with a lettuce leaf, and fill with half the shrimp mixture.
