Adapted from 'Great British Cooking' by Jane Garmey. This is a great spread to serve as an appetizer with toast or crackers.
- 1⁄2 lb shrimp, cooked and peeled
- 5 tablespoons olive oil
- 1 lime, juice of
- 1⁄4 teaspoon cayenne pepper
- 1⁄2 teaspoon dried basil
- 1⁄4 teaspoon ground coriander
- Combine all ingredients in a food processor, and pulse until a paste is formed. Taste for seasoning, then place in a serving dish, cover, and chill for several hours before serving with toast or crackers.
