Shrimp in Flak Jackets of Prosciutto and Roasted Garlic

  • Using a small knife, butterfly the shrimp lengthwise, slicing about halfway through. Mix together the chevre, garlic, rosemary and pepper. Dab about 1/2 teaspoons of the mixture into the sliced pocket of each shrimp, wrap with a piece of prosciutto, and place on a parchment-lined baking sheet. When all the shrimp have been stuffed and wrapped, drizzle them with the olive oil, crack a little pepper over top, wrap well and refrigerate until needed.
  • When it's cooking time, preheat the oven to 425'. Cook until the shrimp are pink and beginning to curl, about 5 minutes. Serve hot or at room temperature.

I have been happily married for 20+ years. We have two wonderful kids. Our son is in his second year at University and living 3 hours away from home. (The sending of care parcels is about to resume this fall.) Our daughter just graduated and is taking classes with the hope of going into nursing next year. We have been going through a reno (from ____) for the past year. It's not the world's biggest reno but it's been hugely disruptive as it's dragged on far too long. I haven't had an island in my kitchen for a year now. Not to mention the three months we went without a stove. Recipezaar has been (since I joined in Feb.) pure escapism for me. I love to save recipes that I envision myself making once my kitchen is totally functional. Of my Premium Zaar Membership - I tell friends it's the best $25.00 dollars I've ever spent! And it is. I hope to one day enter all of my recipes so that my kids will ultimately have 'a copy' of their own.
