I Really liked this recipe as is but it really reminded me of tom yum (Thai soup) so I changed it a bit. Basically I just halved the onion & tomato & used 2 garlic cloves (the traditional Thai doesn't use garlic, but I love garlic & the end product is good). I added 4- 50 cent sized pieces of fresh ginger, 1 "stick" of lemon grass, 1/2 of a lime (just the juice), 4 kaffir lime leaves, 6 small mushrooms (quartered). I used yellow bell pepper for the color & just plain white sugar instead of brown. I used 1 fresh medium sized red chile pepper chopped. I follow the directions as written and add the ginger, lemon grass, lime juice, lime leaves, mushrooms & sugar when I add the coconut milk. It turns out great! I make it at least once a week & serve with steamed white rice...Aroy mak mak (Thai for very delicious).

Okay, I pretty much followed the recipe as written. I wasn't quite sure what you meant by red chili so I used the red chili sauce in the Asian section of the grocery store. I used one red bell pepper and at least twice the amount of red chili sauce called for. In the future I would use a lot more. Also, we ended up adding quite a bit of salt to the finished product. I've been thinking that adding some fish sauce might fix that. Once we were finished with dinner, I looked through the recipe again and realized that I omitted the brown sugar. I don't know how that would have affected the finished product. I will take a certain amount of responsibility for that but it was not mentioned in the instructions which is why I forgot it. Basically, I would probably pass on this one in the future but my husband liked it enough that he wants me to tweek it till we like it. As written though, for me it was just okay. Sorry.
I tried this recipe thinking it was something else and am SO glad I did! This is the first recipe in two weeks that came out PERFECT - I wouldnt change a thing. I used 1.5 teaspoons of minced garlic instead of cloves, 1.5 cups canned diced tomatoes (didnt have any fresh), 1 green pepper, and 1/2 teaspoon of chili flakes. I forgot the brown sugar! I served with white rice and brocolli, and it was the first time my boyfriend went back for seconds - later that night, thirds! And then haha, fourths for lunch the next day! Excellent recipe!!
