I used a seafood mix (shrimp, squid, octopus, and crab meat), a can of diced tomatoes and doubled the recipe. It was delicious! Except that my husband thought it was too spicy! (And I did take out most of the jalapeno seeds!) We will definitely make this recipe again!
I added scallops and shrimp and it was perfect. I took out half of the jalapeno seeds (my hubby likes it mild) and I thought I could have kept all of the seeds. I needed salt and white pepper (I didn't use all of the butter it called for), but it was a very enjoyable dish.
This is a yummy dish and I think lovers of Italian food would give this a 5 star rating. The shrimp are flavourful and so is the reduced sauce. This is a great meal to prepare and eat on a busy week night - easy and tasty. With a name like "Diablo" though, we were expecting more heat. Next time I will add at least a 1/2 tsp of dried red pepper flakes to help with that.
