  1. Heat butter in skillet.
  2. Reduce heat, cook onion and carrot.
  3. Add curry powder and cook 1 minute, stirring. Then remove to a bowl.
  4. Add oil to skillet, then heat mustard seeds, cook 30 seconds, stirring.
  5. Add shrimp, cook until opaque, about 4 minutes, stirring frequently.
  6. Return vegetables to skillet and add remaining ingredients to heat through.
