I found this recipe in one of my many cookbooks and changed a few of the ingredients. It is a favorite of my friends.
- Saute bellpeppers, mushrooms onions and garlic in oil it usually takes me 5-10 minutes.
- Add tomatoes and thyme.
- Then add broth and tomato paste and let simmer for 10 minutes.
- Lastly add the cooked shrimp. Serve over cooked rice, I usually just mix the rice in to make it a one dish meal.
