ingredients
- 8 ounces uncooked medium-size shell pasta
- 3⁄4 cup lemon-herb dressing with mint and tarragon
- 1 lb medium cooked shrimp (peeled and deveined)
- 1 large nectarine, cut into thin wedges
- 1 cup chopped seedless cucumber
- 1⁄4 cup fresh raspberry (optional)
- 1⁄2 cup fresh arugula (optional)
directions
- Cook pasta according to package directions; drain.
- Plunge into ice water to stop the cooking process; drain and place in a large bowl.
- Add 1/2 cup dressing, tossing to coat.
- Stir in shrimp, nectarine, and cucumber.
- Serve with remaining 1/4 cup dressing.
- Garnish, if desired.

Quick and easy pasta salad with a different flavor-I did add the raspberries and arugula for additional color anda bit of a bite from the greens. Beautiful, tasty salad that I wll make again when nectarines and raspberrries are in season, for even more flavor! This would also be good with chicken or other seafood. I madethis for Spring PAC 2010, thanks!
