- 6 slice bacon
- 473.18-532.32 ml tomatoes, cooked
- 2 green peppers, cut into strips
- 2 garlic cloves, minced
- 473.18 ml shrimp, boiled and peeled
directions
- Cook bacon in a heavy skillet until brown and crisp. Remove from skillet and set aside.
- Add tomatoes, green peppers, and garlic to skillet; simmer until peppers are tender and tomatoes are reduced to about one-half. This takes about 40 minutes.
- Add shrimp, and simmer 5 minutes until heated through. Serve with hot rice or grits.

Could this be better than Shrimp Scampi??? DH thinks so; he loves these ingredients. You can tell it is an old SL recipe; today SL would tell you to drain off all but one tablespoon of bacon grease to be more dietarily correct. I made as directed, except I purchased 1 pound of Old Bay-seasoned steamed shrimp. I used a drained 28-ounce can of whole San Marzano tomatoes, but stewed tomatoes could be used as well. Easy dinner, you can introduce your desired seasoning through your shrimp or tomato choices. The author of this recipe obviously subscribes to the school of thought that every dish can be improved with the addition of bacon (and often, I think that camp is correct). It takes time to cook the bacon, and 45 minutes to simmer, but nothing is complicated and you don't have to tend to the dish slavishly. This was a very satisfying meal. Made for 1-2-3 Hits tag game.

What a full flavor recipe, "DELICIOUS"!!! After cooking the bacon I sauteed the green pepper strips and garlic in the bacon grease for a few minutes before adding in the tomatoes, other than that made as written and after adding in the shrimp I stirred in the crumbled bacon before serving over Recipe #113983. What a wonderful recipe breezer! I used 2 14 oz. cans of diced tomatoes with basil, garlic & oregeno, and about 1 tsp. of red pepper flakes for some spice. Like Andi, I also added some onion to the mix. We served this over linguine last night, but will try over rice the next time. I love shrimp, love bacon, really loved this recipe!!!!

Our local seafood market had a pound of ex-jumbo (12-15 per pound) prawns in the shop last week, so I grabbed a pound and wanted to use this lovely recipe with the extra tomato/pepper/garlic mixture. We had a large group at our house, and this came in handy to serve. I made a large amount of rice, and set out the shrimp, bacon, and tomato mixture and people grabbed bowls (that had been warmed in the oven) put down the rice, added the wonderful tomatoes and put shrimp on top. Wow, this was wonderful! The only change I had was to add some sliced onions in with the tomatoes and sprinkled the bacon on top of each dish. Thank you so much breezer!
