- 3 cups shredded carrots
- 1 cup raisins
- 1⁄2 cup chopped cashews
- 1⁄2 cup mayonnaise or 1⁄2 cup salad dressing
- In a serving bowl, combine the carrots, raisins, nuts and mayonnaise. Refrigerate leftovers.
This salad is so good and I like the addition of cashews. I wouldn't have thought of cashews in a carrot salad. This is great. I used light mayonnaise. Thanks crazycookinmama :) Made for Holiday tag
