A tasty soup that my kids beg for!


  1. Peel and prepare vegetables by chopping coarsely.
  2. Sautee onions in olive oil inn a large pot until translucent.
  3. Put in all remaining ingredients.
  4. Add enough water to cover.
  5. Simmer until veggies are soft.
  6. Blend soup with immersion or regular blender.
  7. Garnish with shredded cheddar cheese.
