"Bearnaise" is a French sauce that's traditionally made with a tricky technique. This easy version is fool-proof, and is a snap to prepare. Serve with meat or fish, or drizzle over asparagus or broccoli.

Sadly, this didn't turn out too great for me. I didn't have any parsley to hand so omitted it, the rest of the directions I followed to the letter. It still ended up tasting overwhelmingly of mayonnaise, albeit with the sweetness of tarragon and sharpness of vinegar. I think this recipe heavily depends on what sort of mayonnaise you use, or perhaps really needs the parsley.
- 2 tablespoons white vinegar
- 1 teaspoon dried tarragon
- 1 teaspoon chopped fresh parsley
