  • Place rack in center of oven.
  • Preheat oven to 330 degrees F.
  • Cream butter with sugars until light and fluffy.
  • Add salt, vanilla and cornmeal and beat until combined well.
  • Add flour, ¼ cup at a time, beating until just combined.
  • Divide dough into 4 balls and on each of 2 baking sheets, press 2 of the balls into 5 inch rounds.
  • With fork tines, score each round into 6 wedges and prick edges decoratively.
  • Bake for 20-30 minutes, or until shortbread is just firm.
  • Cut halfway through each round along prick marks and transfer to racks to cool.

  2. Great recipe. It was easy to make and was delicious! The shortbread is tasteful with an interesting texture, thanks to the cornmeal. I put jelly on it, and really liked the combination. My husband and I could not stop eating it! Will make it again for a special treat.
     
  3. Once I got around a mis-scaling of the flour amounts for an increased recipe, this worked out perfectly. I made one batch with 3/4 c. pecans added - perfect amount. I also added vanilla powder and a bare pinch of nutmeg to deepen the flavour, and used only light brown sugar instead of the mix. I'm definitely going to make this one again.

  5. Terrific shortbread recipe!! I plan to mail this to my MIL for her birthday and I tried one--delicious and very easy to make as well. They would be perfect with tea. Love the texture imparted by the inclusion of cornmeal!! Yum!!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
