directions

  • Layer sliced raw veggies into a roaster or casserole dish.
  • Sprinkle each layer with salt and pepper.
  • Pat beef on top.
  • Sprinkle rice over.
  • Add celery.
  • Mix soup and water.
  • Pour over casserole.
  • Cover with lid or foil.
  • Bake 350 2 hours or until veggies are tender.

  1. This is one if my families favorite recipes. I usually increase the rice to 1 cup and add 2 cans of soup and water as we like it saucy. Also to save time and as a shortcut that allows me to do less cutting (I have carpal tunnel and knife work is getting difficult) I substitute approx 2-3 cups of frozen peas and carrots mix or reg mixed veggies for the carrots and celery in the recipe and it works quite well. This is also very good with a little bacon chopped up and added in with the hamburger, gives it a really pleasant smoky flavor.

  4. We really enjoyed this. I served it with Chunky Apple Muffins and it was a tasty and satisfying meal on a cold ND evening. 2 hours was a bit too long as the potatoes burned to the bottom of the dish. Thanks for a great recipe!
     
  5. Tasty, tasty, tasty! Mine was in the oven for five minutes before I realized the celery was not in the dish, but on the counter! That's o.k., though, it was still very tasty. Next time, though, I think I'll add some spice (thyme, basil, or oregano) to the soup just to spice it up a bit. A big thanks to you, Fairy Godmother, for a good, healthy and really easy dish.
