A simple casserole for a busy day. I slice everything in my food processor, that really speeds things up in the prep. Great casserole for a potluck dinner and really inexpensive.
- 2 onions
- 2 potatoes
- 3 carrots
- 1 lb ground beef
- 1⁄2 cup rice (raw)
- 1 cup celery
- 1 teaspoon salt (approx.)
- 1⁄2 teaspoon pepper (approx.)
- 10 ounces tomato soup
- 10 ounces water (1 can of water)
- Layer sliced raw veggies into a roaster or casserole dish.
- Sprinkle each layer with salt and pepper.
- Pat beef on top.
- Sprinkle rice over.
- Add celery.
- Mix soup and water.
- Pour over casserole.
- Cover with lid or foil.
- Bake 350 2 hours or until veggies are tender.
This is one if my families favorite recipes. I usually increase the rice to 1 cup and add 2 cans of soup and water as we like it saucy. Also to save time and as a shortcut that allows me to do less cutting (I have carpal tunnel and knife work is getting difficult) I substitute approx 2-3 cups of frozen peas and carrots mix or reg mixed veggies for the carrots and celery in the recipe and it works quite well. This is also very good with a little bacon chopped up and added in with the hamburger, gives it a really pleasant smoky flavor.

This was good. But, for our preferences, it was somewhat lacking in the seasonings. Next time I make it, I'll have to add a lot more spices for flavor. Thank you for posting.
