This was so easy and tasted fabulous. I used chick peas instead of the kidney beans and increased the potatoes and cheese. The creamed corn and salsa made a nice sauce. Even the leftovers were eaten, a rarity in my house.
This has to be the fastest meal I've ever made! And it tastes gooood!! I used regular corn instead of creamed corn and no cheese. I can't compare it to 'real' Shepard's Pie because I've never had it but this is fantastic for a weekday when you're in a hurry to get dinner cooked. I'm looking forward to making it often, maybe adding some different spices for variety.
My DH, a meat and potato man if there ever was one, ate a huge helping and never once asked about the meat! A great score for our house. Thanks.
I've made this twice now - once exactly as called for, and tonight I put some ground beef in it to make it go farther (we freeze leftovers for lunches). Both ways were excellent - I'll never make a "plain" shepards' pie again ! Oh - and no cheese here, my son has a severe dairy allergy.
I liked the ease of preparation. I had no canned mixed vegs, so I used a can of cut yams (well-rinsed and drained), and it was very good that way. I was a bit skeptical about all that garlic powder, but it worked. Unfortunately, I was more enthusiastic about this recipe than the rest of my family was, but even so I will make it again. I loved the fact that it was so low in fat.
This was a good dish, but nobody at our house thought it was a keeper as is, all agreeing that the salsa was out of place and in general it was "missing something." I like the idea of this a lot and will try to tweak it to our own personal tastebuds by trying various veggies and sauce ingredients. Love the ease of the recipe, the hominess comfort factor, and the potato topping though!
