- 453.59 g fresh white mushroom
- 44.37 ml extra virgin olive oil
- 236.59 ml sliced leeks (green onions) or 236.59 ml scallion (green onions)
- 236.59 ml canned vegetable broth or 236.59 ml low sodium chicken broth
- 411.06 g can diced tomatoes, drained
- 2.46 ml salt
- 1.23 ml ground black pepper
- 354.88 ml frozen baby peas
- 453.59 g pasta shells
- 118.29 ml freshly grated parmigiano-reggiano cheese
directions
- Trim mushrooms and thickly slice (makes about 6 cups); set aside.
- In a large pot, bring 6 quarts of salted water to a boil. In a large skillet, heat olive oil over medium-high heat.
- Add leeks and prepared mushrooms; cook stirring until tender, about 5 minutes. Stir in broth, tomatoes, salt and pepper; cook and stir, uncovered, until the liquid is reduced by half, about 5 minutes; stir in peas during the last 2 minutes.
- Meanwhile, cook pasta in the boiling water according to package directions until al dente. Transfer hot pasta to a large serving bowl; add mushroom and pea mixture and the cheese; toss until pasta is coated.

I am a fan of the childrens books about Winnie the Pooh. I especially love TIGGER. Actually I love just about everything Disney. One of the things I miss most from living in Florida was getting to go to Walt Disney World anytime I wanted to. It really is one of the happiest places on earth.
