Delicious! The only issue is after cooking....the last time I fried eggplant & drained it on paper towels, they 'steamed' & got soggy. SO I put them on cooling racks over paper towels & they stayed crunchy but as they cooled the oil did whatever & they got soggy. grr! But YUMMM!! And the chutney was fantastic.
