  1. Whisk shallots, rice vinegar and Dijon mustard in small bowl to blend. Gradually whisk in oil. Season dressing to taste with salt and pepper.

This was FANTASTIC! I couldn't believe how easy it was to put together and how much flavor it delivered. I make a vinaigrette that is fairly similar, but is a little more complicated with several more ingredients. I found that this combination was really all I needed. The Nutrition Facts listed with this recipe really don't do this justice - this is really a healthy vinaigrette as this made enough dressing to generously cover 6 side salads for us (which would be around 57 cal/4.5g of fat per serving according to the calculations - not bad!) I think this would also be wonderful over some fresh steamed veggies as well. If you are a shallot lover or if you like the flavor of rice wine vinegar, you should give this a try - it's delicious!
