Seven (+1) Can Soup

"My sister got this recipe from a friend in an RV park. It's easy, fast to put together and tastes good. "Ranch" is the brand name of the beans, but they can be hard to find unless you're in Texas or WalMart, so other ranch-style beans can be substituted."

  • Brown the ground beef.
  • While that's happening, open all the cans.
  • Drain the ground beef, dump everything in a large pot and simmer about one hour.
  • It can also be made in a crock pot.
  • Time isn't critical, since all the ingredients are already cooked. Low temperature would be best.
  • NOTE: Be sure you read the label on the tomatoes. Both my sister and I thought this was a little too spicy and kept cutting down on the chili powder. Then we discovered that Rotel with chilies now come in different degrees of hot.

I live in NW Indiana, near Chicago, retired more than 3 years ago. I'm on our local school board and play alto sax in a community band. I can't choose a favorite cookbook, because I have about 20 feet of shelves with nothing BUT cookbooks. One of the "ideas" listed for this was, "If you have a month off--no work, no responsibilities...." I've had the no work, but the responsibilities are still there. And what I do is put things off until tomorrow because there's plenty of time. Even if there isn't. One of my pet peeves is not being able to find things in my kitchen. Since my son moved back in, and he cooks, and he uses my kitchen...I'm peeved a lot.
