      Great dish! And simple. I used broccoli instead of zucchini, threw in some sugar snaps and mushrooms. There's definitely room for more veggies here! I'll add more next time. Thanks!

      My family really, really enjoyed this. I used homemade seitan from Vegan with a Vengeance. The dish even looked pretty. I served it with an asian flavored sauteed broccoli dish to round out the meal. Very excellent. Will be making it again.
