  • In a pestle and mortar, pound the tahini, lemon juice, soy, ginger and garlic (or blitz them in a blender). Thin with about 5 tbs of hot water, or as much as is needed to get the mix to the consistency of heavy cream.
  • Now either stir in the sesame seeds and parsley or cilantro and use within a couple of hours, or store for a few days, sealed in a jar in the fridge, and add the sesame and herbs an hour or so before serving.

I live in Manchester, UK with my fiance and young son. I work at the local hospital in pediatrics and love my job. I also love cooking!! I have a sweet tooth but try and make healthy family meals, I'm not against some lovely treats now and then though :)
