This is great trickled over roasted, broiled or barbecued steak, chicken or asparagus.

  1. In a pestle and mortar, pound the tahini, lemon juice, soy, ginger and garlic (or blitz them in a blender). Thin with about 5 tbs of hot water, or as much as is needed to get the mix to the consistency of heavy cream.
  2. Now either stir in the sesame seeds and parsley or cilantro and use within a couple of hours, or store for a few days, sealed in a jar in the fridge, and add the sesame and herbs an hour or so before serving.
