Another recipe from the Australian Women's Weekly. An Australian cup is 250ml and a tablespoon is 20ml. Preparation time includes 30 minutes refrigeration.

  1. Sift flour and pepper into a bowl, rub in butter.
  2. Stir in cheese, potato and egg yolk.
  3. Knead gently on floured surface until smooth, cover and refrigerate for 30 minutes.
  4. Preheat oven to 180°C.
  5. Roll dough on lightly floured surface until 3mm thick.
  6. Use a star shaped cutter to cut into 5cm stars, press stars into seeds, place stars seed side up about 1cm apart onto greased oven trays.
  7. Bake for about 15 minutes or until lightly browned.
  8. Cool on wire racks.

My first attempt at crackers. My cayenne says extra hot on it and I should have thought about that and adjusted the amount as they were very spicy. And my husband said he couldn't tell there was cheese in them at all. I could sense a hint of cheese but definately needs more cheese flavor. Mine were triangles as I didn't have a star cutter. Thanks!

My first attempt at crackers! They were pretty easy - though they were more like squares (or some of them, blobs) since I don't have a star cookie cutter. I love the cayenne! I think I might use a bit of salt next time. I used sharp cheddar, but this recipe could take a stronger flavored cheese, so I will experiment with other types. I'll also try spreading the sesame seeds on top of the rolled dough before cutting, since pressing all those little crackers in seeds was a little tedious (of course it didn't help that I was in a hurry at the time).
