I've tried a few seared tuna recipes and took elements I liked from them to create this recipe. I find it to produce a really tasty product. Let me know how you like it! I find it best served with a spinach salad and/or other side dishes.
- 2 lbs tuna steaks
- 3 tablespoons soy sauce
- 1 cup water
- 1 tablespoon rice vinegar
- 1 teaspoon garlic powder
- 1⁄2 teaspoon crushed red pepper flakes
- 1 teaspoon cornstarch
- 2 teaspoons sesame seeds
- 1⁄2 teaspoon fresh ground black pepper
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- Mix together ingredients 2 through 5 to make a marinade.
- Marinate the tuna steaks for at least 10 minutes (I tend to buy sashimi grade tuna medallions/steaks).
- Pour the two oils into a frying pan, preferably non-stick or anodized, and heat over low-medium flame.
- Place the tuna steaks in the hot oil.
- Pour one teaspoon corn starch onto each tuna steak, then one teaspoon sesame seeds and half the fresh ground black pepper.
- After about 4 minutes, flip the steak over. Cover the other side with 1 teaspoon sesame seeds and the rest of the fresh ground black pepper.
- Cook for another 3-4 minutes.
- Flip the tuna steak over one last time for about 1 min to toast the sesame seeds.
- Let rest for a few minutes before slicing and serving.
I love the idea...but, my technique is lacking - didn't quite turn out amazing as it should have...but, again...my fault. I think I'm destined to order fish at restaurants...when I cook it, it just never turns out right - too bad, this could have been amazing
This recipe is awesome! My boyfriend and I were so sick of my boring fish recipes until we came across this one. Definitely the best tuna I have ever made. The only suggestion I have is to keep an eye on the doneness of your tuna. Next time I will only cook the tuna for 2 minutes on each side.
