Sergios Belgian Endive Salad

This is something my former employer at an Italian restaurant used to make after work, one of 2 ways that make me eat Belgian endive. It's not a proper recipe, so i have never measured the ingredients.

As written, this could be dangerous to a new cook....it's too much salt for that amount of endive. that said, what a simple & refreshing recipe! for the 4 of us, i fixed 6 endives & used less than 1/2tsp salt. Made for ZWT7. :) Thank you!

Directions

  1. Cut endive in quarters, take away the bitter part in the center.
  2. If you want you can cut them into smaller pieces, but the quarts look quite nice imo.
  3. Wash, dry.
  4. Drizzle some olive oil over it.
  5. Grind pepper and salt to taste.
  6. And that's it!
