This is an American Indian recipe. It is an easy homey side dish.
- In a large pan, fry the bacon pieces until browned and crisp.
- Add the hominy, salt and pepper and cook stirring constantly 6-7 minutes.
- Add green onions and continue cooking for 5 minutes.
- Serve immediately.
I have a question - do you drain the bacon grease from the skillet or cook the hominy and green onions and bacon with the grease?
The bacon definitely makes the hominy much more tasty.
WOW!!!! I think I actually went back for 4ths!!! Finally a veggie that DH and I can both agree on. 2 yr old DD was not a big fan but I don't think she cares for hominy in the first place. This is a once-a-week side for us now.
