Self Saucing Chocolate Pudding

"A recipe my mum gave me when I left home which I rediscovered over the weekend. Not sure of its origin - possibly Edmonds Cookbook - but a good, quick microwave pudding that my kids love. Great on cold days."

  • Sift flour, cocoa, salt and sugar into a bowl.
  • Stir in milk, melted butter and vanilla till mixture is just combined.
  • Spoon batter into a large ring container or casserole dish.
  • Combine brown sugar, cocoa and coconut and sprinkle it over the batter.
  • Pour hot water carefully over the batter and cover with a sheet of waxed paper.
  • Cook on high for 6 - 7 minutes.
  • Serve with icecream or whipped cream.

  2. Works beautifully for me. Also a recipe my mum used, but never attempted in microwave (until now!). Her recipe was from Edmonds. Beautiful with frozen raspberries stirred through the batter just prior to cooking.

Although after reading a previous comment I only put it in my microwave for 5 minutes and it came out totally scrumptious - Absolutely the sauciest chocolate pudding I have ever had. A little dust of icing sugar and some Vanilla ice-cream - TO DIE FOR! Note After: I think the different problems people are having relate to the differences in their microwaves. Mine turns out like a big soft sponge with a thick slightly jelly type sauce. I don't add the coconut, only add 1/2 cup sugar and substitute cocoa for milo and it comes out beautiful each time.

About me hmm - tricky. I'm a Kiwi, living on the South Island who found this site quite by accident one day and have lurked for a couple of months now. I'm a insurance claims supervisor specialising in Motor Vehicle claims - although I also handle other claims as well.
