Secret Recipe Chocolate Chip Cookies

This great little chocolate chip cookie is made with ground rolled oats. What is the secret ingredient?--one I have never seen in a chocolate chip cookie recipe before?--lemon juice. The lemon juice reacts with the baking soda to make a softer, chewier cookie.

  1. Preheat oven to 350°F.
  2. Process rolled oats in a food processer or blender until finly ground.
  3. Combine ground oats, flour, baking soda, salt and cinnamon in a mixing bowl.
  4. In a second bowl, cream butter, sugar, vanilla and lemon juice together with electric mixer.
  5. Add eggs and beat until fluffy.
  6. Stir the flour mixture into the butter mixture, blending well.
  7. Add the chocolate chips and nuts to the dough and mix well.
  8. Using about 1/4 cup dough for each cookie, scoop round balls and place 2 1/2-inches apart on to parchment-lined baking sheet--a ice cream scoop works well.
  9. Bake until cookies are lightly browned, 16-18 minutes. (Time will depend on how large you make the cookies--I actually prefer them about 1/8 cup dough per cookie and they cook in about 10 minutes).
  10. Transfer to a wire rack to cool completely.
  11. Store in a zip-top container to keep them soft and chewy.

I received this recipe in the mail as well. I made them w/o using a food processor, I just used straight quick oats. These were THE BEST cookies I have ever made or tasted! I'm not sure if it's the parchment paper(this was the first time I had used parchment paper)but they looked so beautiful, just like from a bakery & tasted awesome. I got the greatest compliments, even from people who weren't big sweet eaters. I definitely recommend using parchment paper, I think it was the magic touch!! And no need for a food processor using quick oats!! BTW:I didn't add walnuts due to food allergies. Update: I discovered you can substitute 1/2 ts of vinegar for the 1 ts lemon juice, still the most awesome cookies!

Nice cookie, but not the most flavorful. I have several choc. chip recipes I like more and are easier to make - don't need to use my food processor. They are soft.
