Season's Crock Pot Chicago Italian Beef Sandwiches

"This can be served as a main dish but is great on Italian bread or toasted hoagies. Oh, and here's a tip -- make sure you DON'T drain the meat before placing it on the rolls -- the liquid has an AWESOME taste, so make sure you get plenty of it on your sandwich for the best flavor. In Chicago they say "the wetter, the better" when it comes to Italian Beef Sandwiches!!"

  • In a medium saucepan over medium heat. Combine the salt, pepper, oregano, basil, onion salt, water, parsley, garlic powder, water, bay leaf and salad dressing mix. Stir well and bring just to a boil.
  • Place roast in a slow cooker and pour mixture over the roast. cover and cook on low setting for 10-12 hrs on low or high for 4-5 hours.
  • The best thing to do is to have it cook in the slow cooker until it is cooked through, remove the bay leaf, then shredd it and return it to the juice for about an hour.
  • Optional - Last 45 minutes add boullion cubes and green pepper. If you use broth instead of water don't add the bouillon cubes.
  • Serve on Italian bread.

  1. Made this for a pool party and it was a hit!! I did the beef broth version but I would definitely do the least amount of liquid. After 10 hours there was a lot of liquid from the meat so I felt it diluted the flavor, plus there is still plenty of gravy. Seemed biggest complaint on reviews was being too salty so I substituted the onion salt with onion powder and used low sodium beef broth. Don't use beef broth from can, as I think it has a tin flavor, use the box kind. Added peppers and sliced onion three hours before serving, delicious!! Also I doubled the recipe using 8 1/2 lb roast but again ease up on broth or water.
     
  2. So flavorful! The beef fell apart in the crock pot, and the au jus was amazing! I added sliced onions, red, orange, and yellow bell peppers, and half of a jar of sweet banana peppers about an hour before it was done cooking. I also made homemade hoagie buns to serve it on, which were great! (Pammy's Hoagies #161440) Thank you! We will definitely be making this again!
     
  3. Excellent! Just what I was looking for. I didn't have any nice crusty rolls so made a pot of white rice to serve it over. Great combination. I didn't do anything different with recipe, except left out the green peppers since my Hubby doesn't like them. Definitely high salt though, so cut back if you don't have a salty palette. For once he didn't have to ADD salt to his dinner. A keeper!
     
  4. we thought this was really good! we did not add the bell peppers but didnt see the need to after eating it..i felt it was a little salty but my husband loved it!!
     
  5. Delish! We had this tonight on fresh ciabatta buns with provolone cheese. We used the yummy broth as au jus and dipped away! I made this as directed and wouldn't change anything. The spices were very nice and not overpowering. Made for 2009 Faves. Thanks Hill Family! :)

This is a family cookbook by the Hill Family. It all started with Charlie and Mary Hill. They had 7 children; Bruce, Francis, Howard, Charlie, Mignon, Joe and Sarah. Food and cooking was a big part of Charlie and Mary's lives and has been a big part of their childrens lives as well. Francis's Poem The Hill Clan even talks about it. The Hill Clan When we were growing up, there was plenty, Seven kids to feed, that was too many. Dad, I remember you always worked hard. And when it came to gambling, you were a card. Mom, you were always in the kitchen, Cooking, baking and making decisions. What to do with one pound of hamburger, to feed seven, And you always did, Oh thank heaven!!! Bruce and I were always elected to do the dishes, And we always did, with Dad's best wishes. Howard and Charlie were on the run, The rest of us prayed they would never get a gun. Mom, Mignon always hung in there by your knee, You couldn't even take time to pee. Then, there was Joe, we couldn't figure where he came from, The baker, the milkman, or some bum. Sarah Ann, we thought she was the best, She turned out to be the biggest mess. And to come from a very large family that came many miles, To wish us both the best of luck, with a kiss, a hug, and a smile. We wonder how we can be so lucky to have all our children, grandchildren and great grandchildren here, We hold them all so very dear. Thrown in are also recipes from Mary's sister and niece. The Hill clan produced lots of good cooks and even more good eaters. Mary also wrote this poem about her 50 years of marriage and boy was she right about more grandchildren and greatgrandchildren to come. 50 Years It has been 50 years since I was caught. Charlie chased me down and we tied the knot. With a family of seven, it took alot of living. But more then that, lots of forgiving. We had four boys and three girls, And I'm happy to say, they are still with us up to this day. Nineteen grandchildren and five great, I am sure there will be more, after this date. We done our part for posterity, I think that's the way it's supposed to be. There will always be room for more.
