  • In a large bowl, toss potatoes with oil. Combine the remaining ingredients; sprinkle over potatoes and toss to coat.
  • Arrange potatoes in a single layer pan coated with non-stick cooking spray. Bake, uncovered, at 425* for 40-45 min or until tender, stirring once.

  2. There's just the two of us, so I made this with two potatoes and 2 teaspoons of oil. I made all the seasoned breadcrumb mix with the idea of putting the rest in a zip-lock bag and making again if we liked it. We like it!! It's a winner recipe thank you!!!

  4. This is great. I used the small, one or two bite size, Yukon Gold cut in half. Roasted them @400F (my over runs hot) for the 40 mins. Love the seasoning mix and the texture that the crumbs create. Used Smoked Spanish Paprika, which to be honest I'm not sure was noticeable as such in this small amount but I know it didn't hurt any, lol. Crisp and flavorful on the outside while soft and almost creamy on the inside. Marvelous. Made for PAC, Fall '09.
