  1. Heat the olive oil and butter in a large pan over medium-high heat.
  2. Salt and pepper both sides of the scallops and place them in the pan. Whatever you do, do not move the scallops at all until ready to flip.
  3. Sear the scallops on each side for 1.5 minutes, then remove from the pan and serve.

Delicious succulent scallops! I grilled mine, as it is over 100 degrees F here and I didn't want to heat up my kitchen. Made for "When It's Hot/When It's Not" tag game 2010.
