- 177.44 ml vegetable oil (I used safflower oil)
- 177.44 ml flour (I used whole wheat)
- 2.46 ml dried thyme
- 2.46 ml dried basil
- 1 bay leaf, crumbled
- 14.79 ml salt
- 2.46 ml cayenne pepper
- 2.46 ml black pepper
- 2 stalk celery, diced
- 1 bell pepper, diced
- 1 onion, diced
- 236.59 ml okra, sliced (I used frozen okra)
- 3-4 garlic cloves, minced (I used 3)
- 1419.54 ml chicken broth
- 473.18 ml clam juice
- 680.38 g medium shrimp, peeled, shells reserved
- 411.06 g can fire-roasted tomatoes
- 473.18 ml oysters, drained and cut into bite-size pieces
- 453.59 g crabmeat (I used claw crabmeat)
- 453.59 g frozen crawfish tail meat, thawed
- 1892.72 ml rice, cooked
- 4 green onions, chopped (garnish)
directions
- Heat oil in large skillet or pot over medium high heat. Stir in flour; cooking until smooth and darkened to the color of a penny). Stir in next 11 ingredients (thyme - garlic) and cook until vegetables are tender (about 20-30 minutes -- my okra was still frozen when I added it, so it probably took a bit longer to cook than if I used fresh or thawed okra). Remove from heat and let cook for at least 30 minutes -- I did this part way ahead so mine cooled for over an hour.
- In a large soup pot bring chicken broth, clam juice and reserved shrimp shells (don't forget the shells - they add lots of flavor) to a boil and then cook for 10 minutes or so. Remove shells and discard.
- Stir in vegetable mixture into broth and cook until thickened over medium heat.
- Stir in tomatoes, seafood (oysters - shrimp) and simmer 20-30 minutes -- but this can be kept warm over very low heat (I kept mine warm for over an hour and it was wonderful).
- Serve over rice and sprinkle with green onions, if desired.

Such an adventure to make. Our crawfish were alive from the seafood market. We bought a whole crab and cooked and cleaned out the meat. This definitely expanded our cooking experiences. That said next time we would leave out the oysters, we discovered we aren't oyster lovers. Good and Tasty Recipe. Made for ZWT 9.

Spicy good! I used chopped clams in place of the oysters. Added more shrimp to make up for the craw-fish I couldn`t get. Used fresh 1 1/2 teaspoons thyme, 1 1/2 teaspoons basil was used in place of the dry. Used a red onion an orange bell pepper. I did make shrimp stock along with home made chicken stock. Garlic was kicked up to 6 cloves. I used my pepper flakes in place of the cayenne which consists of very hot chilies. Delish and a must make.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes.
