This was a yummy frosting! I varied from the directions a bit, though. I pureed the fresh strawberries so there would not be chunks in the icing. I also added a dash of salt to cut the sweetness a little. I prob had more than the 1/2 c of strawberries so I ended up adding an extra cup of p. sugar to thicken it a bit and refridgerated before using. It was still a bit melty so I may add more next time. This is excellent icing. I pretty much followed Chefcrystal's changes--I pureed the strawberries, added a pinch of salt and a dash of vanilla. Especially with pureed strawberries, the icing piped beautifully onto my son's cupcakes, and had a lovely, fresh strawberry flavor. Will definitely make this again!
