This is pretty good stuff. Despite the cute name, this is basically sloppy joes on an english muffin and topped with a slice of melted cheese. The meat/sauce mixture is kind of mildly flavored, but still good. I made this pretty much as written, with about 1.5 lbs. of 90/10 ground sirloin, half a medium-sized white onion, and a can of store-brand tomato sauce (I couldn't find Hunt's in a 15 oz. can). You don't really need to bake them in a 350-degree oven. The cheese melts so quickly that I just stuck the scrumpchies in the oven as it was heating up, around 200 degrees, and took them out less than 2 minutes later. I had 4 at a time, for 3 consecutive dinners, and I still enjoyed them. (I cooked the meat mixture in advance and just assembled the final things each night.) Thanks, and I just might make these again soon!
