Scrambled Omelette

"Delightful savoury light lunch for one. I find it too hard to make an omelette that looks like an omelette, so I scramble it - it's quicker and just as tasty!"

  1. This was delicious! I made it following the recipe, except I did add some mushrooms and spinach that I had left over in the fridge. Yummy! I did find I needed to cook some of the liquid out of the tomatoes, and so I let them fry along with the bacon and onion for a while. My husband and I enjoyed this, thanks so much!
