WOW what a great breakfast with lots of flavour that certainly wakened the taste buds first thing in the morning. As I could not get mexican blend cheese I used a sharp vintage cheddar and added a dash of tobasco sauce to the egg mix (I scaled back for 1 serve). For the tortilla I used a 9 grain wrap bread and a hot salsa and thoroughly enjoyed a simple and quick breakfast. Thank you Charlotte J, made for Make My Recipe - Edition 16.

I had some tortillas that I needed to use up so I made this for breakfast this weekend. I mixed it all together in the pan and it was delicious!! Thanks for a new breakfast dish.

Delicious and Easy! I cut the recipe down for 1 (I was making this for myself after the kids went to school and DH to work) and I LOVED it! I used some kind of wrap bread that we just got and skipped the butter entirely. It was GREAT!

This delicious meal was too easy! DH and I added chopped tomatoes, cilantro and green onion to the top of ours and we used wheat tortillas. This is one of those pantry-item recipes... good to clean out the fridge! Made for ZWT5.

I made these for myself for breakfast. It's nice to go to some small effort even for yourself from time to time. I rarely eat a hot breakfast so this was a welcome break from that routine. Next time, I would add some onion and mushrooms to my eggs and use a spicier salsa, provided the rest of the family hasn't finished it off, which is what happend this time around. Thanks for this tasty morning treat. Made and reviewed for ZWT 5 for the Genies of Gourmet.

being from texas, this is how I make my eggs whenever I make 'em. :) it is always delicious. to make it more like the huevos rancheros we get down here, I recommend adding the salsa to the eggs with the cheese and mixing them all up well. serve with sour cream on homemade style tortillas and this is a hit! thanks for sharing the recipe.

Thank you for sharing this, I used butter in place of margarine and added in some Cajun spice to the eggs, Dh enjoyed this for lunch!...Kitten:)

This was a quick and tasty breakfast. For a variation, one could saute a bit of onion and chile peppers before adding the eggs. This was great! Thanks!

This made a nice Sunday breakfast for my DH and me. I halved the recipe easily. I used chedder, mozzarella, and Monterey Jack cheese for the Mexican blend. Thank you for a good breakfast!
