What a wonderful breakfast. I have to admit that I was a bit worried when I added the cottage cheese because the eggs became very watery. I trusted the recipe and kept cooking for 5 more minutes. I was rewarded with very creamy, flavorful eggs. I will definitely be making this often. Thanks!
I make an omlete from these same ingredients, minus the onions (personal choice), but plus roma tomatoes and a touch of parmesan cheese. Fresh spinach leaves work great too. Yummy! Also, if you enjoy a little extra zing, a sprinkle of Spike seasoning tops it all off wonderfully. BYT, I add my slices of tomatoes to the spinach and to the top. I highly recommend this recipe with or without the additions!! Oh yeah, I also use 3 egg whites w/ a Tbl. of water for the omlete.
