ingredients

  • 2 slices white bread (any bread will do)
  • 1 -2 egg
  • cheddar cheese, grated
  • 1 teaspoon butter, melted
  • 2 -4 slices cooked turkey breast, thinly sliced or 2 -4 slices crisp cooked bacon

directions

  • Scramble eggs in frying pan.
  • Melt butter. Brush onto each slice of bread.
  • Sprinkle cheese onto one side of bread.
  • Place turkey and/or bacon.
  • Place eggs on top of meat.
  • Place in panini maker or George Foreman Grill.

  1. This is my new go-to breakfast sandwich! I don't have a panini maker, so I just cooked it on a stovetop grill pan with a heavy skillet on top to press it down!
     
  2. What a fun breakfast idea! I scrambled the eggs quickly in the micro while the panini grill was heating. I used provolone, thinly sliced ham, the egg, and chipotle mayo on a 9 grain bread. I will definitely be making this again! Made for Spring '09 Pick A Chef.
     
  3. We really enjoyed this recipe, it was very filling. We used homemade honey wheat bread and added cooked, chopped turkey bacon and chopped green onions to the scrambled eggs when cooking them. We sprayed the bread with butter cooking spray, them sprinkled 1 tablespoon of reduced fat cheddar cheese and topped with honey brined turkey breast then the scrambled eggs and finished with 1 teaspoon of garlic jack cheese.
     
  4. Nice change from our usual breakfast sandwich. It was super filling a little heavy, but good. Thanks for posting the recipe.
     
  5. What a cool idea for a panini! I had never used my panini maker for breakfast. I did omit the turkey but next time I think I will try it with bacon. We all really enjoyed this recipe. Thanks!
