We came across this sandwich at a small coffee/bagel shop in Palm Springs a few years ago. We were surprised at how much we loved these and had to start making them at home. Egg salad would be good in these too.
- Scoop the insides of the bagel out - I use a steak knife to sort of slice about 1/4 inch from the edge, then use a spoon and my fingers to pull the bread out.
- Toast the hollowed out bagel.
- Fill with your choice of salad.
i have enjoyed many bagel sammies they are really good with tuna salad
