I spent a short time as a cook at Schuler's (Grand Haven). This is how we served it... in a small soup crock, put a large freshly baked crouton (w/ sprinkles of parm.), add about an ounce of ale, fill it with soup, drape a slice of swiss over the top, sprinkle it with more parm., in the oven a few min. to melt the swiss... presto, a truly great soup. Rich and ever so good.

A very rich warming soup! I was unsure about adding the flour butter mix but it thickened it up nicely.I used chicken broth instead of beef broth and added 1T of balsamic vinegar. Very easy to make. Thanks for a good one. Catherine
